4 pounds fresh or frozen catfish fillets
1/2 cup prepared mustard
Oil for frying
1 1/2 cups cornmeal
3 tablespoons of Cajun Seasoning or your favorite seafood seasoning
Make sure the catfish fillets are completely thawed and sliced thinly. Rinse the fillets and pat dry with paper towels.
Cut fish into 2-inch pieces and combine in an airtight bowl with mustard. Marinate in the refrigerator for 15 minutes.
Meanwhile preheat the oil to 400º F in electric indoor turkey fryer. Combine cornmeal and Cajun Seasoning using a whisk to stir together well. Dip the fish fillets in the cornmeal mixture evenly coating all sides.
Place them carefully in the fryer basket and lower into the oil. Fry only 6 to 8 pieces at a time for 4 to 5 minutes or until golden brown. Remove from hot oil and drain on paper towels.
